Once it gets past 203 degrees - the boiling point of water where you happen to live - it goes really fast.Donna Curriehttps://www.blogger.com/profile/12833303767775886944noreply@blogger.comtag:blogger.com,1999:blog-2239521152553433086.post-80007686613704663872011-12-17T11:25:26.754-07:002011-12-17T11:25:26.754-07:00Looks yummy!
Any advice for high-altitude candy...Looks yummy!

Any advice for high-altitude candy making? I made a seriously horrific batch of fudge last year and have been a little gun-shy about candy ever since!Lizhttps://www.blogger.com/profile/09611934661455462828noreply@blogger.comtag:blogger.com,1999:blog-2239521152553433086.post-66957490810242549802011-12-16T20:45:23.327-07:002011-12-16T20:45:23.327-07:00Looks great!!Looks great!!Katarinahttps://www.blogger.com/profile/15158381323468184120noreply@blogger.comtag:blogger.com,1999:blog-2239521152553433086.post-88812100913388268642011-12-15T14:43:03.897-07:002011-12-15T14:43:03.897-07:00i'll try to make this using brown sugar... se...i'll try to make this using brown sugar... seems really nice indeed!!!KarmaFree Cookinghttp://www.karma-free-cooking.comnoreply@blogger.comtag:blogger.com,1999:blog-2239521152553433086.post-31841407566722839032011-05-23T19:07:51.706-06:002011-05-23T19:07:51.706-06:00Yup, this is similar to Robin's candy.
If I ...Yup, this is similar to Robin's candy.

If I ever make it again, I'll give it a try without stirring and see if I like the outcome better. With this candy, I don't know if it would make a difference since it's not really solid to begin with, but obviously peanut brittle has a completely different texture. When I make that, I leave it be until it's done.

Good news is that FIL can have nuts gain, so we're back to regular peanut brittles again.Donna Curriehttps://www.blogger.com/profile/12833303767775886944noreply@blogger.comtag:blogger.com,1999:blog-2239521152553433086.post-28933142311666484082011-05-23T18:50:36.080-06:002011-05-23T18:50:36.080-06:00HI Donna!

You can also do this with almond butter, and hazelnut butters.

I hope you don't mind me adding, but people making hard candies should never, NEVER, Never.... stir sugar when making hard candies. It just invites crystallization. I know it "says" so in many cookbooks, but in science based cookbooks, it gives the reason this is not the best technique. It also explains why soooo many people have trouble making candy.

Anyway,
Great post..
Chef Deb T.
