Yesterday, I posted my interview with Janet Johnston, host of Spice & Easy on Food Network.
During the conversation, Janet mentioned this recipe a couple times, so I decided it would be a good one to try.
Before I left the store, Dan warned me not to get carried away with the Italian Sausage spice or the finished dish could be too salty.
I see what he meant. With just the two teaspoons called for in the recipe, it had plenty of salt, so the warning was worthwhile. This guy knows his spice mixes.
Subtle Rustic Red Sauce

2 tbsp. olive oil
1/3 cup finely chopped onion
28 oz. can petite diced tomatoes
2 teaspoons South Fork Italian Sausage Spice
1 tablespoon tomato powder
1 tablespoon Cantanzaro Herbs (an Italian spice blend)
1/2 teaspoon dehydrated minced garlic
Heat oil in sauce pan over medium/high heat. Add onion and cook until translucent, stirring, 4-5 minutes. Reduce heat to medium and stir in tomatoes. Add remaining ingredients and cook for 5 minutes, stirring occasionally.
Reduce heat to low and simmer, covered, for 8-10 minutes, stirring occasionally.
Serve over pasta or use in Savory Spice Shop's recipe for Chicken Gran Paradiso.
The interesting ingredient here was the tomato powder. I've dried my own tomatoes before, but this stuff is a heck of a lot easier. I'm sure I'll find a lot of uses for it, besides pasta sauces.
The recipe was just as fast and easy as promised. After just a little bit of simmering, it was done, and it was darned flavorful. I won't go as far as saying that I'll adopt this as my go-to sauce, but it'll be great for those nights when I don't have time to make a long-cooked sauce.
The finished sauce was just a little tarter than I like, but that's not the fault of the recipe, it was the tartness of the canned tomatoes. That's easy enough to adjust, next time.

Hmm, I wonder if dmcavanagh would like this, blended some to smooth it out for pizza sauce on his pizza?
