Curried Onion and Apple

This recipe was a complete whim. I started with sweating an onion, and I knew I wanted to add something else. But what?

Curry sounded good, and I almost stopped there. Curried onions sounded like a good garnish for the meal I was making.

Then I decided to add an apple. That made the dish. It changed it from a simple garnish to something that was more of a side dish.

When you make this, choose a good baking apple for this, so it doesn't fall apart while you're cooking. I used a Granny Smith, but any apple that's good for pie will be fine.


Curried Onion and Apple

1 tablespoon butter
1 onions, quartered and sliced
1 apple cored, peeled, and sliced
Pinch of salt
Ground white pepper, to taste
1/2 teaspoon curry powder

Heat the oil in a saute pan until it foams. Add the onions and cook, stirring as needed, until the onions begin to soften. Add the apple, salt, pepper, and curry powder. Continue cooking until the apples and onions are cooked through.
