Slap Ya Mama's Deviled Eggs and Turkey Salad

The Internet is a strange place where things can be decided upon and accomplished in the speed of ... well, the Internet.

On a Facebook group that I belong to, one of my friends got a strange and wondrous present: two huuuuuge containers of Slap Ya Mama seasoning mix.

She decided that she had enough to last until Armageddon, so she asked if anyone wanted any, and maybe people could post recipes after they made them.

Next thing you know, there were 30 packages of Slap Ya Mama seasonings winging their way across the US.

None of this was endorsed by, approved of, or sponsored by Slap Ya Mama. We decided to do this because it sounded like FUN. And we're crazy.

It was pretty awesome, really, the way it all came together in no time at all, and then people were posting recipes.

My first was simple. Deviled eggs.

You see, we've been having a bit of a heatwave, and we've been eating a lot of cold foods for dinner. Deviled eggs for sure worked in that menu. Sure, I had to cook the eggs, but they're served chilled.

But that's not ALL!

Here's a recipe for a very simple turkey salad using Slap Ya Mama seasoning. I cooked a couple turkey thighs to make this, but you could use left over turkey or chicken - whatever you happen to have.

I made the deviled eggs with the original recipe Slap Ya Mama, but I made the turkey salad with the hot version. Of course you can substitute one for the other.

Slap Ya Mama's Turkey Thighs
in a salad

2 turkey thighs, cooked and chilled
2 hard boiled eggs, chilled and peeled
1 green bell pepper
1 fire-roasted red bell pepper, peeled and seeded
12 olives (your choice)
1/2 cup mayonnaise
1/2 teaspoon Slap Ya Mama hot seasoning
Lettuce leaves, for serving

Remove the skin from the turkey thigh and remove the meat from the bone.

Cut the meat into bite-size pieces and toss them into a bowl.

Chop the egg roughly and add it to the bowl.

Dice the green and red bell pepper and add them to the bowl.

Chop the olives roughly - if you make sure you cut each one at least in half, you'll be sure that there are no pits remaining in the olives.

Even if your olives are supposed to be pitted, there's a chance you'll find a few pits - so chop them and make sure you get rid of any pits that snuck through the process.

Add the mayonnaise and the Slap Ya Mama seasoning to the bowl and stir to combine.

Taste for seasoning and add more Slap Ya Mama if desired. Add salt, if needed.

Keep refrigerated until serving time.

Serve on a lettuce leaf or use this as a sandwich filling. Or use it to stuff an avocado.
