Salt-and-Peppered Almond Ice Cream

Some days, I feel like my husband and I live on separate planets, food-wise. It's not that we don't like the same things. We do, with very few exceptions. But these days, he needs to gain weight, and that's not exactly on my agenda.

So when I got an offer to write about healthy snacks and the products from Wonderful Foods, I was flipping a mental coin, wondering whose snacks these would be.

Turns out, that coin landed on an edge, and we both get to indulge.

The sliced almonds with cranberries are a perfect topper for salads, adding a little crunch and a little chew. Or, you know, just open the bag and dive in. I don't judge.

The almonds and pistachios are perfect little take-along snacks. The pistachios are in their shells, which is even better for snacking since they take longer to eat. Because your stomach isn't so smart and since you're eating for a while it will imagine you've eaten more food than you did. Or something like that.

So, you have all that nice healthy snacking.

And then this happened.

Ice Cream with Salt-and-Peppered Almonds

2 cups heavy whipping cream
1/4 cup buttermilk
1/4 cup milk
3/4 cup brown sugar
1 tablespoon vanilla extract
2 tablespoons vodka (flavored or not)
1/4 cup Almond Accents with salt and black pepper

Mix everything (except the nuts) together and stir until the sugar is dissolved. If your ice cream maker required a really cold product before churning, refrigerate the mixture until fully chilled.

Otherwise, just move on to the churning, according to manufacturer's instructions.

As you transfer the ice cream to a storage container, sprinkle the almonds in, so they are somewhat evenly distributed in the ice cream. The goal is to not have to stir after the almonds are in, since you want the salt and pepper sticking with the almonds.

Freeze until firm.

If you like, garnish with extra nuts before serving.

If it sounds crazy to have salt-and-peppered almonds in ice cream, don't scoff until you've tried it. It's pretty awesome. 

And also, I'm kind of a nut.
